Garlic gravy

This is one recipe which is easy to make and needs very few ingredients. It is one of the recipe which you can make when you run short of any veggie in your fridge. This gravy can also be stored for a week in fridge if sufficient oil is added.

Soak tamarind in warm water for 15 mins and extract tamarind juice. Keep aside.

Heat oil in a pan, add mustard and methi seeds, curry leaves and garlic and onions. Saute it well.

Add all the masalas.

Now add the tamarind extract and simmer for 15 mins till oil oozes out.

If gravy does not thicken and raw taste of tamarind has gone, you can even add rice flour slurry/coconut paste to the gravy.
