Ingredients

4 servings
  • 2 tspolive oil
  • 1Cooking spray
  • 2garlic cloves, minced
  • 500 gramsmedium shrimp, peeled and deveined
  • 450 gramsplum tomatoes
  • 25 gramsthinly sliced fresh basil
  • 60 gramschopped pitted kalamata olives
  • 2 tbspcapers, drained.
  • 1/4 tspfreshly ground black pepper
  • 225 gramscapellini
  • 50 gramscrumbled feta cheese

Steps

  1. 1

    Heat olive oil in a large nonstick skillet coated with cooking spray over medium-high heat

  2. 2

    Add garlic and sauté 30 seconds

  3. 3

    Add shrimp sauté 1 minute

  4. 4

    Add tomato and basil

  5. 5

    reduce heat and simmer 3 minutes or until tomato is tender

  6. 6

    Stir in kalamata olives, capers, and black pepper

  7. 7

    Combine shrimp mixture and pasta in a large bowl; toss well.

  8. 8

    Top with cheese.
