Ingredients

4 servings
  1. 225 gramsmultigrain farfalle
  2. 1Zest and juice of 1 lemon
  3. 2 tspolive oil
  4. 400 grams1 artichoke - 350-
  5. 225 gramsmozzarella - chopped
  6. 40 gramschopped bottled roasted red bell pepper
  7. 40 gramschopped fresh parsley
  8. 80 gramsfrozen peas

Steps

  1. 1

    Cook pasta according to package instructions, omitting salt and fat.

  2. 2

    combine zest and juice of 1 lemon and 2 teaspoons olive oil in a large bowl, stir well with a whisk

  3. 3

    Add artichoke hearts, cheese, bell pepper, and parsley; toss to combine.

  4. 4

    Place peas in a colander

  5. 5

    when pasta is cooked, drain pasta over peas.

  6. 6

    Shake well to drain, but do not run under cold water.

  7. 7

    Add pasta and peas to artichoke mixture, and toss well until thoroughly combined.

  8. 8

    Serve warm or at room temperature.
