Steps

Put almonds in large bowl and add enough water to cover by 2 inches. Leave soaking at room temp for 8-12 hours.

Boil a kettle of water. Drain almonds and transfer to food processor. Add 1c room temp water and blend for 1-2 min. Should now be thick paste.

Transfer to medium bowl, add 2c boiling water and steep for 10min.

Press mixture through strainer extracting as much liquid as possible. (Ground almonds can be saved for other another use.)

Flavorings can now be added if desired. Whisk to combine thoroughly.
