Ingredients

  1. Approximate ingredients:
  2. 6portobello mushrooms (button mushrooms)
  3. 1/2medium yellow onion
  4. 1/2medium carrot, finely shredded
  5. 1 teaspoonsugar
  6. 150 gramsground pork (about 5.3 oz)
  7. 1 teaspoonground black pepper
  8. 1large egg
  9. 1 pinchsalt
  10. All-purpose flour for shaping
  11. Sliced cheese, as desired
  12. Chopped parsley for garnish
  13. Approximate sauce ingredients:
  14. 6mushroom stems (from portobello mushrooms)
  15. 1/2medium yellow onion
  16. 2tomatoes
  17. 1/2medium eggplant
  18. 1 cupketchup (about 240 ml)
  19. 2 tablespoonsconcentrated fish stock
  20. 1 tablespoonsugar
  21. 2 tablespoonsolive oil
  22. 1 tablespoonsoy sauce

Steps

60 minutes

    Chop all the ingredients and set aside.

    Mix all the filling ingredients together until well combined.

    Spread the shredded carrot as a base layer.

    Spoon the filling mixture on top of the carrot, then bake at medium heat for 30 minutes or until the top starts to brown.

    Meanwhile, boil the tomatoes.

    Peel the tomatoes.

    Sauté the eggplant, sliced onion, and mushroom stems.

    Cook until the onion turns translucent.

    Mash the tomatoes until smooth.

    Combine all the sauce ingredients, add a little water, and season to taste.

    Remove the baked mushrooms from the oven.

    Place sliced cheese on top and bake again until the cheese melts.

    Let cool slightly.

    Finally, plate the mushrooms and sprinkle with chopped parsley before serving.
