Steps

Preheat oven to 350 degrees. Cut squash in half. Clear out seeds. cover insides with vegetable oil then lay skin side up. Bake for 30 minutes or until extreme soft. Take fork and shred squash.

Mix Spinach, grape tomato, shredded mozzarella and squash all together in a bowl. Serve on plate topped with Parmesan cheese.
