Mix all the ingredients, Divide the meat mixture into 5 balls.

Flour all the eggs.
- 3
Flatten the meat mixture then wrap the egg,patting gently to smoth the surface.

Roll each wrap egg in the flour,dip it in egg and coat with breadcrumb, ready to fry or (chill in the fridge untill ready to cook).

Deep fry 2 at a time about 4 - 5 mins.

I have head of these fabled delicacies but never attempted to make one until recently. It’s pretty straight forward. Soft boiled eggs, wrapped with sausage, breaded and fried. I used “Hot” 🙄 Italian sausage, because that’s what I had on hand. But, I personally think it would go better with the sweet Italian sausage with provolone and fennel in it. Karl -
