Ingredients

  1. 1/4 tspsalt
  2. 3/4 cupWhite sugar
  3. 2eggs
  4. 1/4 cupolive or canola oil
  5. 1 1/2 cuppistachio nuts
  6. 1 3/4 cupall-purpose flour
  7. 2 tspvanilla extract
  8. 1/2 cupdried cranberries
  9. 1 tspbaking powder

Steps

    Preheat oven to 300°F.

  2. 2

    In a good sized bowl, mix together oil and sugar until it is well blended.

  3. 3

    Mix in the vanilla extract and then beat in the eggs.

  4. 4

    Combine salt, flour, and baking powder.

  5. 5

    Slowly stir this into the egg mixture.

  6. 6

    Mix in the cranberries and nuts by hand.

  7. 7

    Divide your dough in half. Create two logs (about 12x2 inches) on a parchment paper lined cookie sheet. The dough might be sticky, so wet your hands with cool water.

  8. 8

    Bake for about 35 minutes in the preheated oven. When ready the logs will be a light brown. Remove from oven, and set aside to cool for approximately 10 minutes.

    Reduce the oven heat to 275°F. Cut the logs on diagonal into 3/4 inch thick slices. Lay on their sides on parchment covered cookie sheet and bake about 8 to 10 minutes. Enjoy!
