Sprinkle each fillet with 1 rounded tablespoon of feta cheese and 1/2 teaspoon mint.

Drizzle 1 teaspoon oil over each.

Roll up fillets and secure with toothpicks.

Place fillets in a greased baking dish and bake at 350°F for 30 to 35 minutes or until fish flakes easily with a fork.
