Here’s a traditional Russian recipe with salmon and spinach, perfect for Easter or to celebrate April 1st! Especially fun if you shape it like a fish.

Cut the salmon into cubes and place them in a bowl. Marinate with olive oil and chopped basil. Cook the rice for 15 minutes, then drain and let cool. Hard-boil the eggs. Sauté the spinach leaves in butter until wilted, then set aside.

Cut the puff pastry into a fish shape, making 2 layers. On the first layer, spread a layer of rice, then spinach, then the hard-boiled egg, more spinach, and finally the salmon cubes. Season with salt and pepper.

Cover the filling with the second layer of puff pastry. Seal the edges with a fork and refrigerate for 15 minutes. Use leftover pastry to cut out circles for the fish scales. With the tip of a knife, make two slits to insert a piece of black olive for the eyes.

Beat the egg yolk with a little water, then brush the puff pastry and attach the scales. Preheat the oven to 400°F (200°C), then reduce to 350°F (180°C) and bake for 30 minutes.
