An easy and delicious recipe my grandmother taught me. It's perfect for when you don't know what to make and don't have much time to cook.

Place the ground beef in a pot.

Roughly chop the tomatoes, onion, garlic, and bell pepper. Blend them together and add to the ground beef. Mix well.

Add chicken broth, salt, and pepper. Cook over medium heat.

Finely chop the cilantro.

When the meat starts to cook, add the juice of a peeled bitter orange or, if you don't have one, the juice of 1 or 2 limes to taste. This step is optional, but I like the tangy flavor it adds. If you prefer, you can skip it.

Once the meat is cooked, add the cilantro and the drained can of mixed vegetables. Stir well and let the mixture cook until most of the liquid evaporates. Serve and enjoy!
