Enjoy breakfast in a new filling and healthy way with a potato frittata

Add onions to non stick pan. Fry until golden brown

Add bite size chopped potatoes, salt and black pepper
- 3
Fry until the potatoes start to turn brown and are cooked through

Add chopped yellow and red bell peppers
- 5
Cook until the bell peppers have just softened but still crunchy
- 6
Beat the 3 eggs and add cilantro, mix well. Pour into the potato bell pepper mixture

Turn heat to low and let the frittata cook slowly. Once the top is set, carefully flip the pan onto a plate so the frittata turns to the underside. Slide the frittata back to the pan so the second side cooks as well

Once the egg has cooked through turn heat off, place frittata on plate

Slice the frittata into your desired sizes

Delicious layers of potatoes, bell peppers, cilantro and eggs
