Ingredients

Serves 4 servings
  1. 1/2 cuplentils (about 100 grams)
  2. 4 cupswater (about 1 liter)
  3. 1shrimp bouillon cube
  4. 2tomatoes, diced small
  5. 1/2onion, finely chopped
  6. 3 sprigscilantro, finely chopped
  7. Juice of 1 lime
  8. Juice of 1 orange or
  9. 1/2 cuporange soda (about 120 ml)
  10. 1/2 cupketchup (about 120 ml)
  11. 1 splashwhite vinegar or Worcestershire sauce
  12. Salt and pepper to taste
  13. To taste: chopped serrano or habanero pepper, Tabasco sauce, bottled hot sauce, or any spicy ingredient you prefer

    Rinse the lentils and boil them in the water until tender, making sure there isn’t much liquid left. Add the shrimp bouillon cube during the final boil, then turn off the heat and let cool.

  2. 2

    Place the lentils in a glass or ceramic bowl. Add the rest of the ingredients except the salt, and mix well. Add salt after tasting, if needed—it’s often not necessary.

  3. 3

    Serve and garnish with a few slices of avocado. Enjoy with saltine crackers, tortilla chips, or tostadas.
