Ingredients

4 servings
  1. 2medium potatoes
  2. Onion powder
  3. Garlic powder
  4. White pepper
  5. Sea salt
  6. 4 tbslager beer
  7. 3eggs, divided
  8. 2 tbsMesa flour
  9. 4 tbsap flour
  10. slicesAmerican cheese
  11. Shredded parmesan cheese
  12. 1 tbscider vinegar

Steps

  1. 1

    Wash potatoes. Grade into a bowl of very cold water. Let sit 15 minutes.

  2. 2

    Meanwhile get a pot of water with the vinegar on to boil. You want to hold the water at just over when the water turns. Not a rapid boil. This poaches the egg correctly.

  3. 3

    Drain potatoes well. Mix the spices, flours, one egg, and beer with them.

  4. 4

    Heat a pan with 3 tbs oil. When at medium low heat, drop potatoes in and spread out into thin patties. The thinner the better. Fry until golden brown. Turn several times to insure the inside gets cooked evenly.

    Drop eggs into the boiling water gently. Boil 4 minutes for soft poach. Add 1 minute for medium and 2 for hard.

  6. 6

    The last time you flip the patties, sprinkle with a little more sea salt and add the sliced American cheese to melt.

  7. 7

    Plate patties. Top with poached egg and shredded parmesan. Serve immediately. Enjoy.

cooking is a passion of mine. I started when I was very young and I had to drag a milk crate around to see over the counter. taught by a career cook (my grandmother ). I have always tried to push the boundaries of conventional cooking. I prefer cooking wild game. when I can get my hands on it, but fish is more readily available for me. I raise and butcher most of the livestock that I use for my conventional recipes. I hope everyone can find a few recipes they like in my list.
