Rice, Roasted Tomatoes, and Sausage, with Preserved Lemon Brine

A tasty delicious meal. If you like cuisine from India and added fusion of the Southeast United States then this just might be for you. You can add or even substitute the sausage for shrimp. If you don't have preserved lemon brine you can use red wine vinegar to taste.

Rice, Roasted Tomatoes, and Sausage, with Preserved Lemon Brine

Ingredients

2-4 servings
  1. Rice----------------
  2. 2-1/2 tablespoonsextra Virgin olive oil
  3. 1/2 cuprice
  4. 1-1/2 cupwater
  5. 1/2 tablespoonsgreen papaya powder
  6. 1/2 tablespoonsGaram masala
  7. 15 ouncecan fire roasted tomatoes
  8. 1 tablespoonchopped cilantro
  9. 3 tablespoonchopped parsley
  10. 1 teaspoonsalt
  11. 1 teaspoongranulated garlic powder
  12. 1large onion sliced
  13. Sausage------------------
  14. 1/2 poundsmoked sausage
  15. Lemon Brine--------------------
  16. To tastepreserved lemon juice/brine see my recipe

Cooking Instructions

    Heat the oil and add the rice on high heat.

  2. 2

    Coat and fry the rice for 3-5 minutes. Add the green papaya powder and Garam masala. Let it get coated with the spices and the oil. Another 3-5 minutes. It will be very hot.

    Add a cup of water it will really get to boil quickly

    Add the onion and stir in. Add salt and garlic. The liquids will absorb quickly so don't walk away.

    Add the half cup of water and tomatoes.

  6. 6

    Remove the casings off the sausage and if you use shrimp remove the shell and the digestive vein in the back.

    Slice the sausage on a bias.

    Add sausage / shrimp to the rice.

    Stir in and simmer covered for 15 minutes. Remove from heat and let rest for 10 minutes covered and undisturbed.

    Serve with the preserved lemon brine to taste for each individual or the same way with red wine vinegar.
