Ingredients

  1. 1 largeButternut squash (peeled and cubed)
  2. 1 canFull-fat coconut milk
  3. 1 cupchicken broth
  4. 1Apple (peeled and cut into chunks)
  5. 2 tspcinnamon
  6. 1 tspnutmeg
  7. 1/2 tspginger

Cooking Instructions

    Place all in slow cooker and set to low

  3. 3

    When squash is soft blend with immersion blender

  4. 4

    Should be smooth and silky; season with unrefined sea salt and pepper.

  5. 5

    Top with dollop of olive oil or sour cream
