Ingredients

  • 1/2 lbpasta (campenelle little bells or any tubular)
  • 1 tspolive oil
  • 1/2 cuponion (chopped)
  • 1 clovegarlic (minced)
  • 12ozs roasted red pepper (drained & pureed)
  • 1 cupfresh basil ( coarsely chopped)
  • 4ozs sliced mushooms
  • 3/4 cupchicken broth
  • 1/4 cuphalf & half

  1. 1

    Bring a large pot of water to a boil. Add pasta & cook according to pkg directions. Drain & keep warm.

  2. 2

    Meanwhile, heat the oil in a nonstick sauce pan over medium heat.

  3. 3

    Add the onion & garlic, cook until the onion is soft, about 5 minutes.

  4. 4

    Stir in roasted red peppers, mushroom & basil, cook about 1 minutes, stir.

  5. 5

    Add the broth, simmer, uncovered 10 minutes.

  6. 6

    Remove from heat & add half & half.

  7. 7

    Pour sauce over the pasta & toss to coat.
