Ingredients

  1. 1/2 lbwhole wheat pasta
  2. 3/4 lbShrimp peeled and deveined
  3. 2 cupasparagus cut 1 in. pieces at an angle
  4. 1 canartichoke hearts quartered
  5. 1/2 cuproasted red pepper cut into strips
  6. 3shallots minced
  7. 2 clovegarlic minced
  8. 3 tbsplemon juice
  9. 1 tbspeoo
  10. 1 tbspbutter

    prepare pasta

  2. 2

    in large skillet heat olive oil. add shrimp with salt and pepper and cook until pink, about 3 min.

  3. 3

    Make a well in the center and add garlic. Saute until fragrant (NO LONGER THAN 30 SECONDS) Add asparagus. Next add artichoke quarts, red peppers, and lemon juice and bring to a quick boil. Turn off heat, add butter, tossing with shrimp and vegetables to make a quick sauce. season with salt and pepper

    Drain pasta setting aside 1 cup of pasta water.

    Add shrimp sauce combo to pasta, add past water if needed.
