Pre-heat the oven to 200°C. Boil the potatoes (unpeeled) in salted water for 10 minutes. Drain and leave to cool, then peel and grate coarsely.

Fry the onion and bacon until the onion is soft

Put the potato, onion, bacon and carrots in a large bowl. Add the melted butter, season well and mix.

Grease a 12-hole tray with a little oil. Cut 12 small rounds of baking paper and put them in the tray. Spoon the mixture into the tray, press down lightly and cover with foil.

Cook for 10 minutes, remove the foil and then cook for another 15 minutes. Serve.
