Combine the water, yeast, and sugar and mix until the yeast dissolves, then let it sit for 5 minutes.

Stir in the flour, butter, molasses, and 2 teaspoons salt. Knead on a floured surface, adding more flour if necessary. Knead until the dough is smooth, about 10 minutes. Set aside to rise until doubled.

Once doubled, punch down and divide into 16 pieces. Roll out each section into a 1/2" rope, and then shape into a pretzel shape. Cover and let rise 15 minutes.

Whisk the egg white and 1 tablespoon water together with the remaining salt.

Boil 4 cups of water with the baking soda. Poach each pretzel for 30 seconds on each side.

Transfer to a cookie sheet and brush with the egg mixture and sprinkle with the coarse salt.

Bake at 400' for 15 minutes, until golden brown.
