Ingredients

  • 2 lbGround turkey
  • 1 largeVidalia onion
  • 1 mediumRed bell pepper
  • 1 mediumYellow bell pepper
  • 1 largepoblano
  • 10 clovegarlic cloves
  • olive oil, extra virgin
  • 12 ozDos Equis or other Mexican beer
  • 31 ozLight red kidney beans, two small cans
  • 31 ozPinto beans, two small cans
  • 28 ozLarge can of tomatoe sauce
  • 1 canYellow corn
  • 30 ozFire roasted tomatoes
  • 1 tbsptomato paste
  • Chili seasonings
  • kosher salt
  • 3 tbsptomato paste
  • 4 tbspchili powder
  • 2 tbspground cumin
  • 1 tbspChipotle chili powder
  • 2 tspgranulated garlic
  • 1 tbspsmoked paprika
  • 1 pinchground cinnamon

Steps

  1. 1

    Finely dice the onion, peppers, and garlic

  2. 2

    Add a few tablespoons of EVO in the bottom of a preheated dutch oven. Add onion and peppers and saute until they become soft. Then add garlic and tomato paste and saute another few minutes.

  3. 3

    Add turkey and cook evenly making sure not to break it up too much. Mix tomatoe paste and chili seasonings with turkey mixture for 2 min to season. Add beer and reduce to half

  4. 4

    Add the rest of the ingredients except corn. Reduce heat to low and simmer for 2 hours.

  5. 5

    Add corn to mixture for 20 min then serve. Enjoy!
