Ingredients

  1. 2 lbGround turkey
  2. 1 largeVidalia onion
  3. 1 mediumRed bell pepper
  4. 1 mediumYellow bell pepper
  5. 1 largepoblano
  6. 10 clovegarlic cloves
  7. olive oil, extra virgin
  8. 12 ozDos Equis or other Mexican beer
  9. 31 ozLight red kidney beans, two small cans
  10. 31 ozPinto beans, two small cans
  11. 28 ozLarge can of tomatoe sauce
  12. 1 canYellow corn
  13. 30 ozFire roasted tomatoes
  14. 1 tbsptomato paste
  15. Chili seasonings
  16. kosher salt
  17. 3 tbsptomato paste
  18. 4 tbspchili powder
  19. 2 tbspground cumin
  20. 1 tbspChipotle chili powder
  21. 2 tspgranulated garlic
  22. 1 tbspsmoked paprika
  23. 1 pinchground cinnamon

Steps

  1. 1

    Finely dice the onion, peppers, and garlic

  2. 2

    Add a few tablespoons of EVO in the bottom of a preheated dutch oven. Add onion and peppers and saute until they become soft. Then add garlic and tomato paste and saute another few minutes.

  3. 3

    Add turkey and cook evenly making sure not to break it up too much. Mix tomatoe paste and chili seasonings with turkey mixture for 2 min to season. Add beer and reduce to half

  4. 4

    Add the rest of the ingredients except corn. Reduce heat to low and simmer for 2 hours.

  5. 5

    Add corn to mixture for 20 min then serve. Enjoy!
