These are great on salads, crackers, or just pop them in your mouth. They work great as a snack, or something different for packed lunches. You can use all cream cheese, or select any other soft cheese that you enjoy.

Finely chop the nuts. Toast in a skillet on medium heat until fragrant, and golden in color, usually about 3-7 minutes. Be careful not to burn.

Combine softened cream cheese and goat cheese in a bowl. Drop in heaping spoonfuls on to parchment paper, and refrigerate for 15 mins.

Next, roll into balls, and coat with the pistachios. Wrap tightly, refrigerate for at least a day.
