
Chicken with cream & coriander
Steps

mix flour, a little salt, a lot of black pepper, veg stock powder, curry powder & turmeric in plastic bag - use whatever curry powders you fancy

chop chicken into bite size pieces

squeeze lemon on chicken
- 4
add chicken to bag of curry powder mixture and mix well
- 5
heat oil and add mustard seeds, curry leaves and maybe a few whole Cumin seeds when hot

add chicken to pan & brown quickly on all sides

add a little water to deglaze plan and add half of chopped coriander
- 8
when reduced add cream and remaining coriander

pile baby spinach on plate and zap in microwave until wilted - about 90s
- 10
pile rice on top of spinach and chicken on top of that

serve with lime pickle and yoghurt
