Coconut Bird's Nests

So when I was a kid I LOVED Russell Stover's Bird's nests with the jelly beans in the middle, but they have slowly faded from existence over the years and I just can't find them anywhere anymore. This year I did see "bird nests" by R.S., but they were tiny and flat and, worst of all, NO JELLY BEANSSSSS! 😱
I decided it was high time I cobble some together for myself. This is really a simple "haystack" recipe with the addition of smashing a few jelly beans in the middle.

Steps

  1. 1

Preheat oven to 325°F. Line a baking sheet with foil. Spread coconut out on baking sheet evenly. Place in oven. Bake until lightly toasted stirring every 5 minutes. Should take 15 minutes tops for the proper toasting.

  2. 2

Place chocolate chips in a medium microwave safe bowl. Heat in microwave for 1 minute. Stir. Continue heating in 30 second intervals, stirring after each, until completely melted and smooth.

  3. 3

Add toasted coconut to chocolate stir to combine thoroughly. Use 2 spoons to scoop mixture out into 12 mounds on foil lined baking sheet.

  4. 4

Press 3 jelly beans into the center of each mound. You will need to gently reshape and press coconut mixture more tightly around jelly beans (use the spoons for this lol).

  5. 5

These will set up at room temperature, but to speed up the process (and for best setting) place the baking sheet in the fridge.

Cooking is a hobby and a passion of mine. I love cooking and trying new and different things. The best thing about cooking? I get to prepare delicious food for my family and friends that they (almost) always love! Lol.Many of my recipes are experiments in what I could make with what was available at the time. Many are simply my version of classic and/or popular dishes. A few are variations of recipes I have found elsewhere online but adjusted to our tastes. No matter what, though, each of my recipes is tried and tested before posting and I hope you find as much joy in preparing them as I do.
