Ingredients

  • indian spices
  • 1/2 tspanise seeds
  • 1bayleaf
  • 2star anise
  • 3cardomom
  • 2cloves
  • 2bar anise
  • 2cinnamon
  • 1/2 tsppoppy seeds (khus khus)
  • 1pinch of saffron
  • pulao proper
  • 300 gramsbasmati rice
  • 3large onions- sliced
  • 1large tomato-chopped
  • 1large potato-chopped
  • 1few beans
  • 1carrot-sliced
  • 100 gramscabbage
  • 2 tspginger garlic chilly paste
  • 4 tbspoil
  • 1 tbspfresh lemon juice
  • salt
  • powder ingredients
  • 1/2 tspground cumin
  • 1/2 tspcorriander powder
  • 1 tspdry mango powder
  • 1/2 tspgaram masala
  • 1/2 tspred chilly powder
  • ground black pepper

Steps

  1. 1

    These are the spices I used .

    Soak the rice in water for 20 minutes after rinsing it .

  3. 3

    Heat oil in a pan and add the spices except saffron . After the aroma of the spices come out, add sliced onions and fry until golden brown.

  4. 4

    Now add the ginger garlic chilly paste and fry for 20 seconds till the raw smell goes off .

  5. 5

    Add tomatoes and fry for 2 minutes . Add the rest of the vegetables now and coat them with the oil . Stir for 1 min . Add the powder ingredients one by one and finally add salt.

  6. 6

    Now add the soaked rice and coat it wil the oil . Pour water in the ratio of 1:2 as rice:water . Let the mixture boil .

  7. 7

    Add the lemon juice and the pinch of saffron . Stir for 2 minutes .

  8. 8

    Close the pressure cooker and leave 2 whistles in medium flame .

  9. 9

    Open the container after it has nicely cooked . Garnish with corriander leaves and Serve hot with accompaniments like curd or yoghurt .
