Ingredients

  1. 6 cloveGarlic
  2. 1/4 cupMinced scallion
  3. 1 tspFinely minced jalapeño pepper
  4. 3 tbspChopped fresh cilantro
  5. 8 eachCherry tomatoes, quartered
  6. 1/4 cupFresh lemon juice
  7. 4 eachCod fillet
  8. 1Salt and pepper

Steps

  1. 1

    Press garlic and let sit for 5 mins to bring out its health-promoting properties.

  2. 2

    Mix together garlic, scallions, jalapeño pepper, cilantro, tomatoes, avocado, lemon juice and salt pepper to taste. Set aside.

  3. 3

    Heat 2 inches of water in the bottom of a steamer and let it come to a boil.

  4. 4

    Rub cod with one tablespoon lemon juice and season with a little salt and black pepper. Place in steamer and steam 10 minutes for every inch of thickness (eg. 5 mins if 1/2 inch thick)

    Place fish on plate, and top with salsa.
