The crepes are great on their own, but add this curry for a great savory meal.

Prepare Chicken:Rub chicken breasts in curry powder and bake at 400°F for 25 minutes

Prepare Crepe Batter: Mix flour, salt, water, milk, and eggs in a large bowl. Stir until batter has a runny consistency. (Add more water if necessary)

Melt butter in pan over medium high heat. Stir in Curry powder, Cumin, and cubed sweet potato. Let simmer for 5 minutes

Stir in flour until a paste like consistency. Add Milk, Sriracha, and salt. Stir until thickened (Add more liquid if too thick.

Shred chicken and add to curry. Let simmer on low for at least 15 minutes.

Prepare Crepes: A square electric skillet works best for these. The older the better! Heat skillet to maximum temperature. Once heated, add a pad of butter and spread around pan. Ladle a scoop of batter onto the center of the pan and spread until it coats entire pan. Flip after 2-4 minutes (brown and crispy)

Scoop filling into crepe and enjoy!
