I love recipes that take less than five minutes to prepare, but are really tasty. This dish is just that, light on prep but full of flavour. Perfect served with simple roasted salmon or chicken.

I love recipes that take less than five minutes to prepare, but are really tasty. This dish is just that, light on prep but full of flavour. Perfect served with simple roasted salmon or chicken.

Heat the oven to 175’C
- 2
Place the tomato halves in an oven proof dish. Scatter the peppers over the top.

Drizzle the oil and vinegar over the veg. Season with the oregano, salt and plenty of pepper.

Seal the dish tightly with foil and roast in the oven for 60 minutes.
- 5
Cook the frozen rice as per the manufacturers instructions. Mix with the roasted veg and spoon the extra juices over the top.
