Slow Cooker Johnny Soup

What do you do when Peapod sends Cannellini Beans instead of Split Peas? Make Johnny Soup instead. I was skeptical at first, but once I smelled the aromas from the slow cooker I was hooked.

For this soup, we used leftover ham, but you can use a ham steak, ham hock, etc. You can also use stock or broth, but just plain water was really good. It is up to you. This is basically the same recipe as my Slow Cooker Split Pea Soup, which is really good. It is all good, but I really love the carrots in it. There is just something so good about carrots from the slow cooker.

Good luck during those 8 hours that it is cooking. I wanted to eat asap, but I had to wait. It was so good, that even my fussy son liked it. And he does not like soup.

Ingredients

8 Hours
6-8 servings
  1. 1 package (16 ounces)dried cannellini beans, rinsed
  2. 1large onion, chopped
  3. 1-2 Cupschopped carrots
  4. 2-3garlic cloves, minced, or 2-3 tsp of garlic powder
  5. 2-3 tspDried Oregano
  6. 2-3 tspDried Basil
  7. 1/2 tspdried rosemary, crushed
  8. 1/2 tspdried thyme
  9. 6 cupscold water/ chicken broth or mixture of both
  10. 1-2 cupsham, chopped/cubed
  11. 2-3Bay Leaves
  12. Ground Black Pepper for taste

Steps

8 Hours
  1. 1

    Rinse the beans to get rid of any debris, then add to the slow cooker.

    Add the carrots and onion to the pot. Also add the garlic, if you are using cloves.

    Stir to mix together.

    Place the ham on top of everything, then pour the water on top of that.

    Sprinkle the herbs and spices on top

    Stir slightly, then add the bay leaves to the soup. Place the cover on top of the slow cooker and cook on low for 8 hours.

Since I was a kid, I remember sitting in the kitchen to watch and/or help my parents. As I grew up, I decided to try their recipes and experiment with different recipes. Some were very good and I re-make them all of the time. Others? Yeah, I never tried them again. All of the recipes that I post are the very good ones.Also, while growing up, my pops suffered from high blood pressure, so my mom stopped adding sodium. Since that is how I was raised, all of the dishes that I post do not have any extra sodium added to it. A lot of friends and family who try my recipes, either do not notice nor miss it. But in no way am I saying not to add salt if you use my recipes. If you want to add it, then go for it.In closing, I hope that you enjoy my recipes. If you use any, then please post pictures. Enjoy!
