Ingredients

6-8 servings
  1. 100 gramssugar(add more if you wish)
  2. 180 gramsall purpose flour
  3. 140 gramsbutter/margarine
  4. 2eggs
  5. 1/2 tspbaking powder
  6. 3 tspmilk
  7. 1 pinchsalt

Steps

    Assemble all your ingredients

    Beat your butter till light before adding the sugar

    Ensure all the sugar dissolves.Break your eggs in a different bowl and add it to the mixture. One at a time

    Beat the eggs till airy but do not overbeat

  5. 5

    Mix your flour, baking powder, and salt.Sift it into the mixture in batches.. Adding a little milk

    After all the flour is incorporated, gently fold your batter using a spatula till everything is well combined.

    Decide what cupcake variations you want. I had the following :

    1.Carrot cupcake...Grate a medium sized carrot. Scoop about 2 tablespoons of the butter and add in your grated carrots and give it a good mix.

    2.Red velvet cupcake - Take 1 teaspoon of red food coloring and 11/2 tsp of cocoa powder. Add some water or milk,stir till well combined. Add it to about 2tbs of the batter.

    3.Lemon cupcake:Grate some lemon zest and lemon essence in 2tbs of the batter

    4.Strawberry cupcakes.. Add some strawberry essence to 2tsp of the batter and mix it well

    5.Crushed digestive biscuits cupcake :Crash 2-3 digestive biscuits and add them to the batter

    6.Basic vanilla cupcake.. Add some vanilla essence to the batter

    Pour your batter into your cupcake cases

    You will have preheated your oven to 180 degree C. Place your cupcakes in the hot oven for 15-20 min

    20 minutes later...allow them to cool. Decorate them if you please.
