Ingredients

40 minutes
3-4 servings
  1. 1medium Tomato
  2. 1medium Raw Mango
  3. 1medium onion
  4. 1 cupchopped coriander leaves
  5. 1-2green chilies chopped
  6. 1 tspolive oil
  7. 1-2 tsplemon juice
  8. 1/2 tspsalt
  9. 1/2 tspblack pepper
  10. (Beetroot & spinach Mathri)
  11. 1 cupflour,
  12. 1/2 cup wheat flour,
  13. 1/2 tsp carom seeds,
  14. 1/2 tsp baking soda,
  15. as needed fenugreek leaves
  16. 1/4 cup Beetroot juice
  17. 1/2 tspblack pepper,
  18. 3 tbspoil,

Steps

40 minutes
  1. 1

    In a bowl toss together tomatoes, onion, mango, green chilli, coriander leaves, black pepper, salt, olive oil, lemon juice ready.

  2. 2

    Take a mixing bowl add all the ingredients mix well add 1/4 cup beetroot juice knead dough.

  3. 3

    Rest dough for 15-20 minutes.

  4. 4

    Divide dough into small balls, roll out all balls into circle prick them with fork.

  5. 5

    Preheat oven 180°©

  6. 6

    Mathri circle on a greased baking sheet, bake 25-30 minutes.

  7. 7

    Once cool stire the baked mathri.

  8. 8

    Same method for spinach mathri.

  9. 9

    Serve this with Tomato mango salsa.
