Pre-heat your oven and grease your pan with cooking oil.

Chop the capsicum and tomatoes.

Break the eggs into a bowl and beat it thoroughly. Add salt and black pepper and continue beating.

Mix the eggs in the bowl with the vegetable.

Pour your mixture into the muffin baking tin

Bake for 15 to 20 minutes at 180 degrees..

Serve while hot with coffee or tea..
