Ingredients

15-20 minutes
1 serving
  • 2medium sized egg plant
  • 1chopped tomatoes
  • 1 clovegarlic
  • 1little ginger
  • Salt
  • Cooking oil
  • Chopped onion
  • Soy sauce

Steps

15-20 minutes
  1. 1

    Pound the fresh garlic and ginger together.

  2. 2

    In a medium hot saucepan, I put little cooking oil (just enough?. Added onions cooking until golden brown.

  3. 3

    Added the ground ginger and garlic to cook for a while.

  4. 4

    Added the chopped tomatoes to the mixture cooking.

  5. 5

    Added 2 pinches of salt.

  6. 6

    Chopped the eggplants and added them to cook for 2minutes and added soy sauce.

  7. 7

    Add little water and reduce heat to cook slowly.

  8. 8

    And it's ready.

    You can accompany it with rice, ugali or chapatis bt I prefer mine plain.
