In a medium hot saucepan, I put little cooking oil (just enough?. Added onions cooking until golden brown.

Added the chopped tomatoes to the mixture cooking.

Added 2 pinches of salt.

Chopped the eggplants and added them to cook for 2minutes and added soy sauce.

Add little water and reduce heat to cook slowly.

And it's ready.

You can accompany it with rice, ugali or chapatis bt I prefer mine plain.
