Ingredients

  1. 2 tbspolive oil, extra virgin
  2. 1red onion chopped
  3. 2jalapenos minced
  4. 2small zucchini or summer squash
  5. 1 tbspItalian Seasoning
  6. 1 tspsalt
  7. 1 tspgranulated garlic
  8. 2 dashground black pepper
  9. 1yellow pepper
  10. 1orange pepper
  11. 1 (28 ounce)can hominy
  12. 1 cupfresh chopped cilantro
  13. 1 (5.5 ounce)can sliced black olives
  14. 1optional - top with cheese and chives

Steps

30 mins
  1. 1

    Heat olive oil in a pan and add the onions and the jalapenos. Cook until soft.

  2. 2

    Add the chopped zucchini, salt and pepper and the Italian Seasoning. Cook for a few minutes.

  3. 3

    Chop up the yellow pepper and the orange pepper. Cook for another 2 minutes.

  4. 4

    Strain and rinse the hominy. Drain the olives. Add both to the pan. Cook until warm. And add the cilantro towards the end.

  5. 5

    Options: 1) use 4 ounces of bacon instead olive oil. 2) use bacon bits 3) use cooked chopped ham

  6. 6

    Option - use frozen corn instead.
