Ingredients

  1. For the filling:
  2. 10 1/2 ozfeta cheese, crumbled (300 grams)
  3. 1 containerplain yogurt (about 7 oz or 200 grams)
  4. 5 1/3 ozGouda cheese, shredded (150 grams)
  5. 4 tablespoonsolive oil
  6. 4 tablespoonsmilk
  7. 2eggs for the filling
  8. Salt
  9. Pepper
  10. Mint
  11. ----------------------------------------
  12. 1 packagecountry-style phyllo dough for pies
  13. Olive oil for brushing the phyllo
  14. 1egg for brushing the top
  15. 3 1/2 ozbutter (100 grams)

Steps

  1. 1

    In a bowl, mix together all the filling ingredients. The mixture will be quite runny—that's how it should be.

    Preheat the oven to 340°F (170°C) with the fan on.

  3. 3

    Butter a baking pan and layer 1/3 of the phyllo sheets, brushing each layer with olive oil. Spread half of the filling over the phyllo.

  4. 4

    Add another 1/3 of the phyllo sheets, brushing each with olive oil, and spread the remaining filling on top.

  5. 5

    Finish with the last 1/3 of the phyllo sheets, brushing each with olive oil. Score the pie into pieces, beat the egg, and brush it over the top. Dot the surface with pieces of butter.

  6. 6

    Bake for about 30 minutes at 340°F (170°C), until golden brown.
