In a bowl, mix together all the filling ingredients. The mixture will be quite runny—that's how it should be.

Preheat the oven to 340°F (170°C) with the fan on.

Butter a baking pan and layer 1/3 of the phyllo sheets, brushing each layer with olive oil. Spread half of the filling over the phyllo.

Add another 1/3 of the phyllo sheets, brushing each with olive oil, and spread the remaining filling on top.

Finish with the last 1/3 of the phyllo sheets, brushing each with olive oil. Score the pie into pieces, beat the egg, and brush it over the top. Dot the surface with pieces of butter.

Bake for about 30 minutes at 340°F (170°C), until golden brown.
