Cap Cay is a popular Chinese Indonesian stir fried vegetables dish. Cap Cay could be made as vegetarian dish, or mixed with meat such as chicken, pork, various kinds of seafood, or meatballs. The main ingredients of this delicious dish are mixed vegetables seasoned with oyster sauce, salt, pepper, and Chinese cooking wine. Today I made the vegetarian version of Cap Cay. Instead of using oyster sauce l put mushroom sauce for a replacement. And for the vegetables l used baby bok choy, broccoli, carrot, tomato, mushroom, red, yellow, and orange peppers. Ingredients

  • 1 tablespoonvegetable oil
  • 1 cmginger, minced or smashed
  • 3 clovesgarlic, minced
  • 1carrot, thinly sliced at an angle
  • 100 grbroccoli
  • 100 grbaby bok choy
  • 1/4red bell pepper
  • 1/4yellow bell pepper
  • 1/4orange bell pepper
  • 1tomato, divide into 8
  • 100 grbutton mushroom (you can also use shiitake mushroom or oyster mushroom)
  • 2 tablespoonsmushroom sauce
  • 3 tablespoonstomato ketchup
  • 75 mlwater
  • salt and pepper
  • 2 teaspoonscorn starch mixed with a little water

Steps

    Cut broccoli and baby bok choy. Put them into boiling water for 1 minute. Set aside.

  2. 2

    Heat the vegetable oil in a wok over medium heat. Sauté the garlic and ginger until fragrant.

  3. 3

    Add the carrot. Stir until the carrot half cooked.

  4. 4

    Add mushroom sauce, tomato ketchup, and water. Bring it to boil.

  5. 5

    Add button mushrooms, broccoli, red, yellow, and orange bell peppers, baby bok choy, and tomato. Cook for about 30 seconds.

  6. 6

    Season with salt and pepper.

  7. 7

    Add cornstarch mixture. Stir until the sauce thickened. Serve warm with white rice. Enjoy! 😋
