Easy hot and sour soup

This is a modified version of the recipe in closet cooking:

The ingredients and steps are basically the same, just with adjusted amount and also lightly pan frying some ingredients before adding the broth.

I paired it with pan fried dumplings (just follow the pan frying instruction on the bag) and it made a great dinner!

Ingredients

3-4 servings
  1. 1 quartchicken broth (I use low sodium)
  2. 4 ozshiitake mushroom, thinly sliced
  3. 8 oz(1 small can) thinly sliced bamboo shoot, drained
  4. 12 oz(or 1 box) firm tofu, cut in small cubes or 1/4" strips
  5. 4 clovesgarlic grated/minced
  6. 1 tbspminced/grated ginger
  7. 2 tbspbalsamic vinegar
  8. 3 tbsprice vinegar
  9. 1.5 tbspsriracha
  10. 3 tbspsoy sauce
  11. 2 tspbrown sugar
  12. 2 tbspcorn starch mixed with 2tbsp pf cold water
  13. 2eggs, lightly beaten
  14. 1 tbspsesame oil
  15. White pepper, to taste (I added A LOT as I like it lol)
  16. (Option) green onions

Cooking Instructions

    Add 1 tsp sesame oil and add mushroom to a big sauce pan over medium high heat. Stir fry for 1 minute. (I added some onion, but not necessary)

    Add ginger and garlic and stir fry for another 30 seconds.

    Add bamboo shoot and stir fry for another 30 seconds.

    Add all the rest of the ingredients from the top up to brown sugar to the pan and mix well.

    Turn the heat down after it starts to boil. Simmer for 5 minutes.

    Add corn starch mixture and stir, simmer until the soup is slightly thicken, about 2 minutes.

    Slowly stir in the egg to the soup.

    Add white pepper and sesame oil and green onion. Simmer for another 1 minute.

    Remove from heat and serve :)

    You can pair with fried/steamed dumplings or some stir fry veggies to make a full dinner :D
