Boil all the syrup ingredients together in a saucepan, then let the syrup cool completely.

Mix all the dough ingredients together until you have a soft dough that doesn't stick to your hands. Cover with plastic wrap and let it rest and rise for 1 hour.

For the filling, mix the tahini and sugar together well until the sugar dissolves.

Take a small portion of the dough and roll it out into a sheet that isn't too thick. Spread a little filling on top with a spoon, then roll it up. Cut the roll into pieces about 1 1/4 inches (3 cm) wide and gently press each piece with your fingers.

Preheat your oven to 340°F (170°C). Line a baking sheet with parchment paper and place the rolls on it, leaving some space between them as they will expand. Bake until golden brown.

Remove from the oven and, while still hot, dip the rolls into the cold syrup for a few seconds to soak slightly.

They're ready to serve!
