Place the toasted pita bread in a serving dish and top with the cooked chickpeas. Sprinkle with a little cumin and salt.

For the sauce: In a bowl, combine 4 cups hummus with tahini, 4 tablespoons tahini, 1 cup chickpea cooking liquid, and salt. Mix until the consistency is similar to yogurt.

Pour the sauce over the chickpeas and toasted bread. Sprinkle with sumac and cumin.

Fry the mixed nuts in a little clarified butter (ghee), then add them on top of the fatteh.
