Ingredients

  1. 4bell pepper halves (2 peppers)
  2. 1 tbsolive oil
  3. Salt
  4. Pepper
  5. 3 tbsbutter or margarine
  6. 1/2large onion
  7. 2 tspminced garlic
  8. 3 cupsshredded chicken
  9. 1/2 cuphot sauce
  10. 2 cupsshredded gouda (I used mozzarella)
  11. Ranch dressing for drizzling
  12. 2 tbschopped chives

Steps

  1. 1

    1. Preheat oven to 400 F. Place bell peppers cut side up on large baking sheet and drizzle with olive oil. Season with salt and pepper.

  2. 2

    In a large skillet over medium heat, melt butter. Add onions and cook until tender, about 5 minutes. Add garlic until fragrant, about 1 minute.

  3. 3

    Add shredded chicken and hot sauce and combine. (I usually add 1/2 cup ranch at this step as I find them to be too spicy.) Cook until mixture comes to a simmer then remove from heat.

  4. 4

    Fill pepper halves with the mixture and top with gouda or mozzarella cheese. Bake until cheese is melted and peppers are crisp-tender. About 20 minutes.

    Drizzle with ranch, add chives and serve.
