Ingredients

  1. For Rice
  2. 1 cupbasmati rice(boiled)
  3. 1/2 tspchana dal(soaked)
  4. 1/2 tspurd dal(soaked)
  5. 1 tsppeanuts
  6. 1/2 tspmustard seed
  7. 1 tspcashews
  8. 5-6curry leaves
  9. 2-3Whole red chillimirch
  10. 1 cupgrated fresh coconut
  11. 2 tbslemon juice
  12. to tasteSalt
  13. 1-2 tbspoil
  14. For the gravy
  15. 2tomatoes finely chopped
  16. 1 cupveggies (cabbage,carrot,cauliflower,beans)chopped
  17. 1/4 cuppeas boiled
  18. 1/2 cupbell peppers (red,yellow and green)
  19. 1 tspgreen chilli chopped
  20. 1/2 cupbeaten curd
  21. 1/4 cupcoconut milk
  22. 1/4 tsphaldi powder
  23. 1/2 tsplal mirch powder
  24. 1-4 tspblack pepper
  25. 1/2 tspmustard seeds
  26. 1 tspsambhar masala
  27. 1/4 tspdhaniya powder
  28. to tasteSalt
  29. 2 tbspoil
  30. 3-4curry leaves
  31. Coriander leaves

Steps

  1. 1

    For Rice:Heat oil in a pan.add mustard seeds, sabut lal mirch,chana dal, urdh dal saute for a 2-3 mins.add peanuts,cashews and again saute for 2-3 mins

  2. 2

    Then add curry leaves,2tsp grated coconut, salt, lemon juice and boiled rice mix it well

  3. 3

    For gravy: Heat oil in a pan add mustard seeds,curry leaves then add all veggies and spices cook them for 5-6 mins

  4. 4

    Add 1/2cup beaten curd and coconut milk to the vegetables cook for around 5mins..add coriander leaves mix well and set the cooked vegetables aside

  5. 5

    Add the first layer of rice at the bottom then add layer of grated fresh coconut then add layer of vegetables then add layer of coconut and again layer of rice

  6. 6

    Serve with hing raita..enjoy ur tasty meal
