Ingredients

20 minutes
  1. 2 CupsCooked Wholewheat Pasta (I use Rotini)
  2. 2Nectarines
  3. 2 CupsRocket
  4. 2Large Tomato’s (any tomato will work)
  5. 1/2Large Cucumber
  6. 1/2White Onion
  7. 1 CupFeta Cheese
  8. 1 BunchFresh Basil
  9. HandfulFresh Chives
  10. Optional: Quorn Chicken (or any protein!)
  11. Honey Mustard Dressing
  12. 1/4 CupExtra Virgin Olive Oil
  13. 2 TablespoonsLemon Juice
  14. 1 TablespoonApple Cider Vinegar
  15. 2 TablespoonsDijon Mustard
  16. 1 CloveMinced Garlic
  17. 2 TablespoonsHoney
  18. to tasteSalt & Pepper

Steps

20 minutes
  1. 1

    Cook the Pasta (al dente) and set aside to cool. Toss with a little oil to keep from sticking together!

  2. 2

    Dice the vegetables & nectarines into small chunks.

  3. 3

    Finely chop the chives, and tear the basil into small piece.

  4. 4

    Crumble the feta cheese on top.

  5. 5

    Mix all of the ingredients for the honey mustard in a jar or bowl. If using a jar, add all the ingredients and shake well!

  6. 6

    Pour dressing (as much or as little as you want!) onto the salad & serve!

  7. 7

    Mix the pasta with all of the vegetable, nectarine, herbs, and if you decide to put in Quorn chicken pieces or other proteins do so.
