Cut yam and wash then parboil add little salt and dash of sugar then cook till its tender remove from heat and drain

Heat up a frying pan, then pour the vegetable oil in it
While you are boiling yam, dice pepper, onions and tomatoes and pour everything into the heated pan including thyme

Break eggs, add salt to it and then whisk eggs and set aside, then stir into the sauce

Pour eggs into the pan and then scramble;

Finally serve with boiled yam
