In a large bowl, combine the ground beef, grated onion, parsley, and the soaked bread crumbs (remove the crusts first). Add the salt, black pepper, and cinnamon. Mix well until fully combined.

Shape the mixture into oval patties or rounds and arrange them on a baking sheet. Refrigerate for 10 minutes.

Remove the kofta from the refrigerator. Dip each piece in the beaten eggs, then coat with bread crumbs.

In a deep skillet, heat oil over medium-high heat. Fry the kofta until golden brown, then transfer to a plate lined with plastic wrap. Sprinkle with parsley and serve the breaded kofta hot.
