Ingredients

20 mins
1 serving
  1. 2large eggs
  2. 1small onions (diced)
  3. 1red scotch bonnet pepper (diced)
  4. 1small cut of green bell pepper (diced)
  5. 1small cut of yellow bell pepper (diced)
  6. 2medium plantain (sliced)
  7. Seasoning
  8. Salt
  9. Non stick cooking spray

Steps

  1. 1

    Cut and salt plantain, then fry and set aside

  2. 2

    Break egg in a deep bowl and whisk then add the diced vegetables

  3. 3

    Add little seasoning and salt

  4. 4

    Spray non stick cooking oil spray on a frying pan with metal handle

  5. 5

    Place the pan on very low heat and randomly arrange half of the fried plantain on the base of the pan

  6. 6

    Then pour in the whisked eggs and vegetables

  7. 7

    Cover the pan with a lid to set, and when it is almost set ontop, randomly place the rest of the fried plantain ontop as well

  8. 8

    By now, the bottom part of the fritata must have set so you need the top to set

  9. 9

    Remove the pan from heat and immediately place pan in a preheated oven for the top of the fritata to set.

  10. 10

    Alternatively you can choose to flip the fritata if you decide not to make use of an oven
