Soak the bulgur in lukewarm water and add the spices, salt, and 2 cups of semolina. Mix them well with the water, but don't overdo it. Let them sit for 20 minutes.

Grind them in the kibbeh machine along with the lamb fat. Once done, prepare the filling.

For the filling: Chop the onions finely, wash them, and drain well. Add them to a pan with 2 tablespoons of oil and sauté slightly. Add the meat, spices, and salt, and stir together for half an hour. Add the chopped walnuts, stir, and let them cook. Turn off the heat and transfer to a bowl to cool.

Put the kibbeh machine back together and start feeding the kibbeh dough into the machine. Cut it as desired, fill it with the kibbeh filling, seal it, and arrange on a tray until the quantity is finished.

Heat the oil over high heat and fry them. Enjoy your meal!
