Dahi Vada

After a hectic day in a hospital (follow-ups), parents returned home totally drained in the evening. It was raining cats and dogs outside, and no nearby chops were open to order something 'chatpata'. Thought for a moment and finally thought of preparing Dahi Vada as all the ingredients were at my disposal. Made it with a lot of care and gave a twist in taste with some chutney. Let me tell you parents liked it very much and complemented me stating that this was better than road side snacks and more hygeinic.

Green Chutney Preparation - Grind Dhaniya leaves, pudina leaves, jeera seeds, lemon juice, common salt, Green Chilli all together.

Sweet Chutney Preparation - Keep the tamarind soaked in hot water for 3 hours. Remove the seeds, and take the pulp out and put that in a hot pan along with water, chopped dates, Jaggery, along with a bit of rock salt half teaspoon, half teaspoon salt, half teaspoon roasted jeera powder - boil and stir all till it is thick in consistency.

Vada Preparation - Dal needs to be soaked for 4-5 hrs and Grind it with a bit of water. Dal paste needs to be stirred well in a bowl...Curd needs to be mixed with more in quantity of sugar and little bit of salt and should be kept in fridge. Take the Dal paste, add chopped ginger and a pinch of salt to it and stir and mix it well. Keep the oil ready in a pan under flame. Make small balls of Dal mix and put it in oil. Deep fry them.

In a separate bowl, put the hing and water and keep it aside. As soon as you take out the fried Vadas, put that in hing water and have it soaked there for 5 mins. After 5 mins, squize the water out from vada and put it in cold curd. In the serving plate, put some curd, add the vadas, make a slight cut on each vada, and add green chutney, sweet chutney, on top of it roasted jeera powder and red chilli powder. Dahi Vada is ready for you
