Ingredients

  • 2 cupsrice
  • 1small bowl of ripe fresh tomatoes
  • 12 piecesred bell pepper
  • 3 piecegreen pepper
  • 2big bulb purple onions
  • 1 clovegarlic
  • 1big natural Ginger
  • 2kilos of chicken
  • 1small bunch of spring onions
  • 10 piecechilies
  • 1/2 tspCinnamon
  • Sea salt for taste
  • 1 tsppowered curry
  • 1 tspthyme
  • Seasonings
  • Groundnut oil 2 cooking spoon

  1. 1

    Wash the chicken put in a clean pot add the seasonings,Ginger, garlic, onions, spring onions, onions, curry, thyme and sea salt and cook until tender

  2. 2

    Blend the tomatoes and pepper with the onions and boil for 10 mins

  3. 3

    Put oil in a dry pan and heat up a bit add the diced onions,shredded ginger and garlic a d stir fry for a mins

  4. 4

    Add the boiled tomatoes to the pot and stir fry until the Tomatoes becomes dry

  5. 5

    Add the spring onions and green pepper and stir fry

  6. 6

    Add the chicken stock,add a little water that will cook the rice,add the seasonings, Curry and thyme,cinnamon,bay leaf and sea salt to taste

  7. 7

    Wash the rice with hot water and salt and add to the water that is already boiling stir and cover and cook for 15 minutes

  8. 8

    When the the rice is tender and all the water is dried up stir very well and garnish it with tomatoes,green pepper and some diced carrots

  9. 9

    Serve with fried chicken.
