It's my habit to set aside (ready as hide 😄) some prawns (in the freezer) whenever we get prawns on a Sunday. And then during a weekday, I'll usually combine the reserved prawns with vegetables like bhindi/ brinjal / drumsticks / etc. and make a curry, although my husband is not in favour of combining his precious non-veg with anything else! Seriously! 🙄🙄
So when I want to make HIM happy 😉, I'll combine the Prawns with Eggs and make this masala fry which is one of his favourites. With it's semi dry gravy it goes very well with plain rice and tastes yummy!

Marinate the cleaned prawns with ginger-garlic paste, some salt, turmeric and RCP for half an hour.

Place the marinated prawns in a pan, and cook in it's own juices (on high heat) till the water evaporates. Keep aside.

Grind the chopped onions, chilies, tomato and ginger - coarsely

Heat oil in a flat non-stick pan. Fry the boiled eggs lightly and curry leaves also and keep aside.

Next Lightly fry the prawns also in the oil for 2-3 minutes and keep aside.

The same oil, add the ground paste, a little salt and fry till the oil gets separated. (Add a little more oil it is sticking to the bottom)

Add turmeric, chilli powder, dhania powder, salt…mix well, and fry for 2 minutes.

Add the Prawns and Eggs. Mix with fried masala. Cover and cook on slow heat for 5 minutes, stirring occasionally, till lightly roasted.

Sprinkle the garam masala evenly on the fried masala curry. Mix, cover and cook for another 2 mins.

Remove into a dish. Garnish with curry leaves and serve with Rice
